A comparison of nutritional data for caged versus free range eggs found, on average, the free range eggs had twice as much omega-3 fatty acids, three times more vitamin E, seven times more pro-vitamin A beta-carotene, a quarter less saturated fat and a third less cholesterol. Other tests have demonstrated that pastured eggs have up to six times more essential vitamin D than regular supermarket eggs. They have also been shown to have significantly more B vitamins than a factory egg. Egg yolks are also a known source of lutein and zeaxanthin, but the pale, watery yellow yolks in eggs from caged chickens, fed the waste products of the grain industry, contain very little. Lutein and zeaxanthin are two important antioxidants for the health of your eyes. They help to protect the delicate macula region of your eye from damaging UV and high-intensity blue light.

1 ½ cups chopped cooked meat of any kind
1 ½ cups cracker crumbs
Salt and pepper to taste
¾ cup gravy (to compliment meat choice) or milk
6 Rendezvous Farm free range eggs

Combine meat, crumbs, salt, pepper and gravy or milk. Heat. Fill buttered muffin pans 2/3 full with mixture. Break an egg into each pan. Bake at 350 degrees until eggs are set. Feeds 6.

½ lb. mushrooms, cut into pieces
4 Tbsp. butter
2 Tbsp. flour
1 tsp. salt
¼ tsp pepper
¼ tsp. paprika
1 tsp. Worcestershire sauce
2 cups milk
6 poached Rendezvous Farm free range eggs
6 slices hot toast

Sauté mushrooms in butter until tender (about 5 minutes). Add flour and seasonings; blend. Add milk and cook, stirring constantly. Boil for 3 minutes. Place eggs on toast and cover with sauce. Feeds 6. Additional options: (1) 1 cup chopped lobster may be added to the sauce; (2) Sauté 2 Tbsp. chopped green pepper and 2 Tbsp. minced pimiento with mushrooms. Garnish with pepper rings.
